Kate’s Kitchen: Irish Breakfast

Happy St. Patrick’s Day, everyone!

I’ve always liked this holiday because I feel like it’s a nod to red heads. I’m not Irish, but I like to think that I am.

When Nick and I went to Ireland for our honeymoon, we fell in love with their breakfast. Every hotel we stayed in served it — a full, delicious feast. This morning, we blasted Irish Folk songs through our apartment, and cooked a big Irish breakfast.

The meal is REALLY simple: Eggs sunny side up, hash browns, grilled tomatoes, baked beans, and Irish brown bread. And of course, fresh coffee.

Two years ago I actually made homemade brown bread. It was delicious, but waking up at 5am didn’t sound appealing, so Whole Foods assisted me this year. I hope that all of you are wearing green today so you don’t get pinched, and that you have a great time celebrating this day however you celebrate.
